Huevos Rotos con plátano Verde

Scrambled Eggs and Green Plantain

INGREDIENTS
2 green plantains
 Olive oil
 Onion
 Bacon
 Avocado
Coriander
 Eggs

 
PREPARATION

1. Peel the plantains and cut them into equal parts.
2.
Heat a small amount of olive oil in a frying pan and brown both sides of the plantains.
3. Once it has cooled, lightly knead the plantain and break them into pieces with your fingers.
4. Fry the bacon in a frying pan and set aside on a separate plate for later.
5. Chop the onion and add it to the same frying pan along with the smashed plantains.
6. Add the eggs to the frying pan and cook on low heat.

7. Top with chopped fried bacon and avocado and it's done!
